How much trim you use on take-off and landing depends on the amount of trim 
force you have...I use a very light spring pressure on the trim because I 
like the positive feel on the elevator and on take-off and landing I use 
full up trim.  It is more appropriate to have about 5/8 inch trailing edge 
up at top speed...That will tell you whether you have the correct lateral 
dihedral between the canard and the wing...If the cg is forward, you will 
have stable pitch authority because the elevator is loaded..If the cg is aft 
then the pitch authority will be very sensitive...
