I've never found water in my sump either. But I think if I checked my fuel caps after
the plane sat in air that's cooler than the temperature of the fuel, I would find
water drops on the caps. I've never removed the caps under those conditions. I
always add fuel right after landing where the fuel is cooler than the air, in which
case condensation will not happen.
