I am painting mine myself, but here are some general guidelines:

In general, you can finish your bird as you see fit. After that, it is good practice to spray a coat of Sealer-Primer over your work. This type of primer is NOT designed to add much build at all, but is formulated so that it isolates & seals the layer underneath from your topcoat. 
Your painter can and should do that step. It will include scuffing/sanding with the appropriate courseness to provide mechanical adhesion of the sealer primer. Your painter can use a different brand of sealer primer than the topcoat, but most will stick with one system from that point "up".  Then there will be a window that you can shoot the topcoat without re-scuffing, since you will get chemical adhesion. If you wait outside that window, then re-scuffing with the appropriate courseness is needed prior to topcoat.

Though NO where close to paint, I did want to ask around for recommendations for a good paint shop / painter.  I'm close to getting the airplane on it's backside for the preverbal flip and I'm planning on doing filling, sanding and priming while I've got it like that.  The reason I want to talk to the paint guys early is so that whatever I shoot will be compatible with whatever finishing system they use, so I want to start the conversation early.
