John,
These are all good ideas.  Here's my two cents.  Get your seat final seat height figured out by buying the doing your cushions and then sit down in it.  Then pull the chair to where you will fly.  For me that is full throw for the rudder pedals without pointing my toes.  Also notice with little effort you can adjust the lean back angle on the chair back.  Fix that to your liking before you decide on stick height.  Now, while seated, stick your right elbow out and have somebody measure the height off your keel.  You don't want to have your right shoulder either up in the air, and you do want to be able to solidly plant your forearm on to a cushion.  I think that was Scott B point in part.  Next reach your hand out, with cupped fingers as if grabbing the stick and find a comfortable for you arm-wrist-hand angle.  It will likely not be straight up and down...more like a slight aft slant.  Set your stick height and angle to match that.   I cut mine.  I remember that...can't say by how much, but I only 5'8" with arms to match.

My control stick measures 5.75" above the keel at the highest point.  When operating PTT or trim buttons, my arm is 1.5" above the keel.  I think it would be more comfortable if the stick was 1.5" shorter, so my arm rests on the keel.  What height do others have.  Anyone see a problem if I shorten mine by 1.5"?
