REFLECTOR: humidity and baffle thickness

I'm re-sealing my fuel tanks this week and I'm a little paranoid. It's raining in Dallas today. Is there any problem using Jeffco (or EZ-Poxy) when the humidity is high?

On another subject, I think I'm just going to make aluminum engine baffles instead of using the factory's plenum and runners. Can anyone recommend a material thickness? I'm thinking around .020 or .025.
