Kevin,
I am not understanding your numbers...
1)  you report a fuel burn-rate of about 15 gph.
2)  the distance from PHX to LAS is about 222 nmi.   For a two-hour trip, that gives an average speed of 111 kts.  This figures to about 7.4 nmi/gal.

3)  My guestimate of the power required to fly (my Velocity) at 111 kts is about 66 hp ; 
   hp = (5.5 gal/hr)   x   (6 lb/gal)  /  (0.5 BSFC)  =  66 hp  
  This figures to about  111 / 5.5 = 20 nmi/gal.
