Articles in both Flying and Private Pilot give two reasons why:
First, due to altitude, you can send/receive from several cells at once.
Second, planes move too fast from cell to cell.  These two phenomena result
in tying up multiple cells.

Both articles claimed that cell phones can be used in the air legally, but
for emergency use only.  I always carry one for that purpose.
